    Spice levels, and how to cater for everyone

    Why heat and spice are not the same thing, how a professional kitchen builds a menu that suits both a five-year-old and a chilli enthusiast, and what to ask your caterer.

    Heat is one ingredient. Spice is the whole cupboard

    Chilli provides heat. Cumin, coriander seed, cardamom, cinnamon, clove, fenugreek and mustard seed provide spice — aroma and depth with no burn at all. A korma is heavily spiced and barely hot; a plain chilli sauce is hot and barely spiced.

    This matters when catering, because guests who say they 'don't like spicy food' almost always mean heat. Removing chilli keeps the dish interesting. Removing the whole spice base makes it bland, and that is the complaint you actually hear afterwards.

    Practical rules

    • Label every dish on the line with its heat level; guests will not ask a member of staff mid-queue.
    • Serve raita and plain yoghurt beside the hottest dish, not at the end of the line.
    • Cook chilli into a separate dish rather than raising the whole menu's heat — you can always add, never subtract.
    • For children's events, run the whole menu mild and put chilli oil on the side for the adults.
