South Indian food is a different tradition to the North Indian curries most British diners know — lighter, rice-and-lentil-led, and built around coconut, tamarind, curry leaves and mustard seed. Dosa Buffets and Thali Service

The two service formats that work best for South Indian catering are the buffet-style dosa spread and the seated thali. For a reception of forty to a hundred and fifty standing guests we present freshly prepared dosas buffet-style, with three fillings and a rotating tray of coconut chutney, tomato chutney and sambar, kept hot in professional warm-holding units. For a sit-down wedding or milestone dinner we plate individual banana-leaf-style thalis: two vegetable curries, a dal, sambar, rasam, curd, pickle, rice, a papad and a sweet dish.

Regional Range Across the South

Within South Indian cuisine we cover the Tamil vegetarian tradition (dosa, idli, uttapam, sambar, rasam), the Kerala coastal tradition (coconut fish curry, appam, chicken stew) and the Chettinad style (pepper chicken, roasted spice masalas). Menus are built with the client based on regional preference, guest dietary mix and the service format.
